Simple Chili 

It has been so crazy around here lately! We moved to our beautiful new home recently and have been busily unpacking. One of our favorite things is our new gas stove! Unfortunately, it is only new to us, and we inherited a broken oven. So, we have had to rely on many recipes that do not need an oven to complete. 
Trying to set up and restock a whole kitchen without an oven has left us to many nights of our favorite easy meal: chili! Although we have many different recipes for chili on rotation, this is the easiest. It can be prepped in no time and tastes delicious! 


1 lb ground beef

1 15 oz can of diced tomatoes (keep liquid)

1 6 oz can tomato paste 

1 15.5 oz can black beans (drained and rinsed well) 

1 small onion, chopped

2 stalks large celery, chopped

1 t each cumin and chili powders (can add more to taste) 


1. Brown ground beef in large pot. Drain fat. 

2. Chop veggies (or ask sweet husband to do it)

3. Add vegetables to pot with ground beef. Add diced tomatoes, beans and tomato paste. Mix in seasonings. Stir well and bring to a simmer. 

4. Simmer chili for 15 minutes. 
Now that we’re starting to settle into our new place, I’ll finally be able to return to the blogging world! I have so many things to share in the next few weeks, so stay tuned!
